There's the old saying 'waste not want not' & those are words that are part of our ethos around food.
We will never intentionally waste food. It's far too precious a commodity in a world of waste. Where people are being starved of truly nourishing foods. Where the fast food chains & big supermarket chains are trying to hold the balance of power over what people eat.
Preserving food goes back millennia. To the ancients who knew the importance of saving food for when times got tough or something was out of season. It's how they kept themselves nourished.
We grew up on the land being shown by our matriarchs how to honour the food we have. This includes how to use the food past it's prime. Never to be wasted. So we pickle, we ferment, we preserve, we make jams & relishes, we smoke meats, & IF we can't save it (rarely) then it goes back into our compost so we can nourish the soil we lovingly tend for our own produce.
Everything we make is made by us with the highest care & respect for the foods & the process which comes from many years of being in the food industry.
Don't be fooled too by the 'local produce' you'll often pick up in retail spaces, hospital auxiliaries & market stalls made by absolutely well intentioned people, but often where the ingredients are less than nourishing. We're not judging, we've been there. It feels good to support a charity making chutney's for the sick & unwell. To know that a small business owner (like us) has money in their pocket to feed their family. The question to ask though is 'what's gone into it?' & at what cost?
There's ingredients sold out there to make these processes 'ezy' but at what cost?
Then there's the refined sugars used because they're cheap & make the cost more affordable. But at what cost?
There's bulk fruits and veggies bought from unknown sources to make that big production worthwhile for the big people at the top behind big desks. But at what cost to you?
What's it costing you? Your health. Your body not being strong enough to live long enough. To see a world that's not dying & crumbling by waste & greed.
